Sunflower seed flour (also known as sunflower seed meal) can be used as a great wheat-free alternative to grain flour or nut meals. As an allergen-friendly ingredient, it provides a nutty and mildly sweet flavour to dishes.
Please note: The naturally high chlorogenic acid content of sunflower seeds may react with baking soda (or any other alkaline ingredients), causing baked goods to turn green. This is completely natural and won’t affect the taste or flavour. To prevent this, we suggest using baking powder and an acid such as lemon juice or vinegar at a 1 -2 tsp per cup ratio of sunflower seed meal to your baked goods, which will also help them rise.
