Star anise is the seed pod from the fruit of the Illicium verum plant, an evergreen shrub native to Southwest China. Although this star-shaped pod has a similar flavor and name to Spanish anise, the two plants are unrelated. Star Anise is an essential component of Chinese Five Spice powder and is used in many Oriental recipes, especially those made with duck. Star Anise also adds flavour to stewed compotes of fruit when placed in whole during cooking.

Description

With a rich aroma and graphic shape, star anise is as close to perfection as a spice can be. The seedpod of a type of magnolia tree, its warming aniseed flavour has been used in Chinese and South-East Asian cuisine for centuries – think pho and Chinese five spice – and it’s now popping up on menus everywhere.

How to use it
Although star anise is available ground – handy for stir-fries and marinades – we love the full eight-pointed effect of the whole spice. Whole star anise is best used in slow-cooked dishes and for infusing. Use this treasure judiciously – just one star anise is normally enough to infuse flavour into rich braises and sweet custards alike.
