GINGER COOKIES

60ml OLIVE OIL
60ml TREACLE
half-tsp SALT
150g LOLA’S GLUTEN FREE  SUPERFINE FLOUR
2 tbsp AMARANTH CEREAL or Rice Flour
50g BROWN SUGAR
1-tsp BI-CARBONATE OF SODA
half- tsp TARTARIC ACID
1-tbsp GROUND GINGER (less ginger if it is for children)
3 tbsp FINE RICE FLOUR – FOR ROLLING

PREPARATION

Preheat the oven to 150°C

Measure the oil and treacle and place in a saucepan

Cover a baking tray with silicone baking paper

Weigh the dry ingredients and combine in a plastic bag or basin

MIXING

Place the saucepan on a gentle heat and bring to boiling point.

Remove from heat and tip in the dry ingredients.

Using a wooden spoon mix the cookie mixture well and tip onto a sheet of plastic.

Knead a few times with the rice flour

Cut into shapes with cookie cutters.

BAKING

Place on the prepared tray

Bake 15 minutes in the preheated oven.

Remove from the oven and cool on the tray.
