WHEAT FREE WORLD- CRUMPETS
You will need some metal crumpet rings, a heavy frying pan and some extra oil to grease the pan and rings Most good kitchen shops have crumpet rings or we can mail them from our Online Shop www.wheatfreeworld.com. If yeast is a problem reasonable success is achieved with 2 tablespoons of a low salt baking powder to replace the yeast.
TABLESPOON DRIED YEAST
250g BREAD & PASTRY FLOUR or LOLAS SUPERFINE FLOUR
250ml (1 cup) WARM WATER
1TABLESPOON PSYLLIUM
1/2 CUP COLD WATER
1 TEASPOON SALT
1 TABLESPOON OLIVE OIL.
1 TEASPOON SUGAR
2 TEASPOONS GF BAKING POWDER
PREPARATION
- Place warm water, sugar and salt in a bowl and stir in the yeast.
- Let stand for about 5 minutes or until bubbles appear and the mixture is frothy
- Add the psyllium to the cold water in another bowl and let stand until it becomes a jelly
- Use a flat bottom dish or cake pan with about 1 cup of oil to grease the rings between cooking of the crumpets. A small pair of tongs to handle the hot rings.
- MIXING
Combine the yeast and psyllium mixes and add the olive oil and flour. Finally add the baking powder and beat well with an electric mixer to distribute the yeast, if the mixture is too thick to pour, add a little more warm water.
COOKING
Heat the pan and grease well, grease the rings and place in the pan.
Using a jug, pour in enough mixture to half fill the ring.
Cook on medium heat until the mixture starts to bubble and set
Remove the ring and continue to cook on low heat until set, turn the crumpet, lightly brown until the top is just coloured. You can use a lid to cover the cooking crumpets that will allow them to cook without turning.
To Store
Cool and pack in plastic wrap and refrigerate until ready to use.
The crumpets will keep for a week wrapped in the refrigerator.
To Serve
Toast and serve with honey.
Can be used to make these wholegrain buns. I used a strip of baking paper inside on a silicone mat the greased ring to increase the height of the buns. The recipe is on the New Recipes Page. Crmpets recipe is in Lola’s Wheat Free World cookbook.
