LIGHT DATE SCONES

Preheat oven to 200°
300g PASTRY BLEND –see below
3 tbsp. ICING SUGAR
2tbsp. CREAM OF TARTER
1 tbsp. BI-CARB SODA
2 teas. GELATINE OR AGAR

1/2 cup SOUR CREAM
1 tbsp. GOLDEN SYRUP
120g CHOPPED DATES
2 EGG YOLKS
1/2 cup WARM WATER

2 EGG WHITES STIFFLY BEATEN
2 tbsp. rice flour for rolling.
1 teas. golden syrup mixed with
2 teas. sour cream for topping.

Method
1. Sift the dry ingredients together.
2. Place warm water, sour cream, golden syrup, dates and egg yolks in a bowl, add the flour blend and mix in a chopping motion with a knife until well blended.
3. Add the egg whites and continue to mix until combined.
4. Tip onto the rice flour and gently knead a few times. Press out in a thick slab the height of cutter. 6cm cutter makes 15 scones. Place close together on baking paper brush with topping Bake 20 mins. minutes
