Agar agar is a gelatinous substance derived from red algae that has been popular across Asia for centuries as an ingredient used in desserts and other cooking. It can also be used as a laxative, a vegetarian gelatin substitute, or to thicken soups, sauces or preserves.
As agar agar is derived from plants, not animals, vegetarians and vegans like it as a substitute for any dish that contains gelatin. It can generally be found in Asian supermarkets, health food stores or online, as flakes or powder. It has no taste, odour or colour and sets more firmly than gelatin and can even set at room temperature. Agar agar gives a sensation of fullness, leading it to be used in some diet products. Agar agar can be used in any dairy-free, vegan recipe that calls for gelatin as a thickening agent, including sauces, jelly-based desserts, custards and puddings.
How to use it?
- Use 2 tsp of agar flakes to every cup of liquid in a recipe. Like gelatin, it needs to be dissolved in liquid
- by bringing it to a boil over medium heat and then simmering until thickened, approximately five minutes.
- Set and chill in refrigerator before use.
These amaranth flakes are simply amaranth grain, rolled into these miniature flakes.
They are suitable for making a smooth and creamy gluten-free porridge,
as well as adding to soups to thicken and provide texture.

Amaranth cereal is made from the flowerets of a broad - leafed plant from South America.
A centuries old herb used by Aztecs and American Indians, it is higher in protein than wheat, corn or soya beans. I use it to give a richer colour to brown bread as it adds colour and protein.

Dutch processed cocoa powder that is unsweetened and is a pure rich chocolate powder that can be used for baking, making desserts, to make your own chocolate and it also makes a scrumptious chocolate shake, smoothie or hot chocolate. Dutch processed unsweetened cocoa powder is made by blending cocoa beans - the initial phase of the process is the fermentation phase to reduce the bitterness of the cocoa. The beans are then removed from the pods, dried and roasted. The roasted cocoa beans are then cracked to expose the cocoa nibs inside, the cocoa nibs are then finely ground into a chocolate liquor (a thick liquid of cocoa butter and cocoa solids). The cocoa butter is then separated from the cocoa solids & the cocoa solids are then processed and pulverised into cocoa powder - chocolate powder.

Poha or flat rice flakes breakfast dish made from flattened rice has origins in central India. The term Kanda Poha is a flat rice flakes recipe with lots of onion. Batatta Poha is a dish with the addition of potatoes and nuts to the same recipe.

Poha Flakes or Flattened rice is a dehusked rice which is flattened into flat light dry flakes. These flakes of rice swell when added to liquid, whether hot or cold, as they absorb water, milk or any other liquids. The thicknesses of these flakes vary between almost translucently thin (the more expensive varieties) to nearly four times thicker than a normal rice grain.

NOTE: In my recipes you will often find that I use psyllium not only to add fibre to the diet but to replace the elasticity lost by the omission of gluten in recipes.
To add psyllium to one of your own recipes do this:
· Place a quarter of a cup of cold water in a small bowl and stir in 2 teaspoons of psyllium.
· Leave to gel while you measure the remaining
This method allows for extra moisture in your recipe.
Dry psyllium powder can be added to the flour in some of my recipes.
A) Quinoa (pronounced Keen-wah) is a highly nutritious gluten-free grain. This ancient grain contains more protein than any other grain, with a good balance of all 8 essential amino acids, making it a good choice for vegetarians. Quinoa is also high in fibre and has a low-GI, beneficial for keeping blood sugar levels stable. Quinoa is an ideal grain for diabetics.
Quinoa is one of the most nutrient rich grains around, being a good source of iron, needed to transport oxygen around the body, B vitamins for energy, calcium and magnesium for healthy nervous system function, and vitamin E, a powerful antioxidant. Quinoa is a wonderful ingredient for salads, just boil it like pasta and rinse well.
For the salad:
1 1/2 cups quinoa
1 tablespoon extra virgin olive oil
1 cup fresh corn kernels (from 2 ears)
1 cup diced (1/2 inch) cherry tomatoes
1/2 cup thin-sliced (1/4 inch) scallions (white and green parts)
For the dressing:
2 teaspoons ground cumin
4 tablespoons extra virgin olive oil
1/2 cup fresh lime juice, plus more to taste
1 tablespoon finely chopped seeded jalapeno pepper, plus more to taste
1 garlic clove, grated
1 teaspoon coarse salt
For the garnish:
1 ripe avocado, halved, pitted, peeled and diced (1/2 inch)
1/2 cup finely chopped fresh cilantro
Quinoa is a complete protein, which means that it contains all the amino acids
necessary for our nutritional needs. Complete proteins are rare in the plant world,
making quinoa an excellent food for vegetarians and vegans, or for anyone looking
for healthy protein source. It's also high in iron and calcium, and is a good source
of manganese, magnesium and copper, as well as fiber.
Can be served like rice as a side dish or in soups,salads and stuffings.
Rapadura is the pure juice extracted from the sugar cane (using a press), which is then evaporated over low heats, whilst being stirred with paddles, then seive ground to produce a grainy sugar. It has not been cooked at high heats, and spun to change it into crystals, and the molasses has not been separated from the sugar. It is produced organically, and does not contain chemicals or anti-caking agents.
Because Rapadura is dehydrated at a low heat, the vitamins and minerals have been retained. It still has the natural balance of sucrose, glucose, and fructose, and contains components essential for its' digestion. It is metabolized more slowly than white sugar, and therefore will not affect your blood sugar levels as much as refined sugars. The more refined the sugar, the more it raises your blood sugar.
Gelatin or gelatine is a translucent, colorless, brittle (when dry), flavorless substance derived from collagen obtained from various animal by-products. It is commonly used as a gelling agent. Substances containing gelatin or functioning in a similar way are called gelatinous. Gelatin is an irreversibly form of collagen, and is classified as a foodstuff. It is found in most candies as well as other products such as some icecream, yoghurt and dips. Household gelatin comes in the form of sheets, granules, or powder. Instant types can be added to the food as they are; others need to be soaked in water beforehand. It is used to add protein and replace gluten in Lola's recipes. Davis gelatine that we sell is beef based.
Agar Powder can replace gelatine and 1 heaped teaspoon is equal to one gelatin leaf.
The natural molecular bonds between individual collagen strands are broken down into a form that rearranges more easily. Gelatin melts to a liquid when heated and solidifies when cooled again. Together with water, it forms a semi-solid gel. Gelatin forms a solution of high viscosity in water, which sets to a gel on cooling, and its chemical composition is, in many respects, closely similar to that of its parent collagen. Sulphites are contained in minute amounts in gelatine and this dissipates in baking, however if you are sensitive to sulphites it is advisable to use agar powder in cold recipes

Why do I need a commercial grade yeast?
is a commercial grade yeast, essential for making gluten free bread.
It has a shelf life of over 3 years when kept in the refrigerator in a jar.Domestic yeasts have too
much of element 491, a chemical used to hasten the rising of wheat bread. This over rises the gluten
free bread causing it to collapse in the oven. Mauripan does contain a small amount of the emulsifier
491 but not enough to over rise the bread.

Organic Shredded Coconut is from the nuts of the Coconut Palms that are spread across much of the tropics.
Coconut is extremely nutritious and rich in fibre, oils, vitamins and minerals. However,
because this has been heat treated to dry it, it looses some of it's vitamin and mineral content.
Shredded coconut is not as fine as the desiccated coconut but again is great in cooking and baking,
